If you didn’t already know, Vogue editor and role model for all betches, Anna Wintour, eats steak or a hamburger minus the bun (or calories) every goddamn day. Protein > carbs.
Because all that Ms. Wintour does is, without question, largely right, and the limit to summer foods we want to eat does not exist, we wanted to offer a recipe to the Vogue gods on her behalf.
- 1 ½ to 2 lbs boneless beef sirloin, cut into 1-inch cubes
- 1 bell pepper (use red or yellow cause green tastes like nothing TBH), cut into 1-inch cubes
- ½ red onion, cut into 1-inch cubes
- 1 small zucchini, cut into 1-inch cubes
- 8-10 grape tomatoes
Marinade for sirloin
- ½ cup extra virgin olive oil
- Kosher salt
- Fresh cracked black pepper
- 1/3 cup red wine vinegar
- ½ tbsp cumin
- 1 tsp paprika (if you have smoked, that’s best)
- 3 cloves garlic, minced
Mix the marinade ingredients in a large bowl. Add the cubed sirloin and let sit in the marinade for 1-4 hrs. The longer you let it sit, the more flavorful the beef.
If you couldn’t fucking tell, you want everything to be roughly the same size. Also, you’ll need either metal skewers or bamboo skewers. If you plan to use bamboo, soak them in water for 1 hour before you start cooking or else they may burst into flames. Just saying.
You can either grill or broil these. If broiling, preheat the oven (to the broiler temp, duh). Before assembling your skewers, throw some salt, pepper, and olive oil on the vegetables so they have some flavor.
Assemble your skewers then place on a broiling pan coated with cooking spray. If grilling, place directly on the grill at medium high heat and cook with the lid lowered about 2-3 minutes per side. Serve with something like a salad or a cube of cheese.
