Because pumpkin is already fucking everywhere, we decided to change shit up a bit. A stellar sweet potato dish can be done just as well AND taste even better than that attention-whoring orange gourd.
Plus, sweet potatoes are full of vitamin A and are cheap as all hell. Also, you could make your own crust because it’ll probably taste better and people will like you more, but, honestly, I choose to buy that shit in the baking aisle. Thanks, Pillsbury.
· 1/3 cup unsalted butter, softened
· ½ cup brown sugar
· 2 eggs
· ¾ cup evaporated milk NOT FUCKING CONDENSED MILK YOU GUYS IT’S DIFFERENT
· 2 cups mashed sweet potatoes – yes you’ll need to peel then boil your potatoes and mash them get over it
· 2 tsps vanilla extract
· 1 tsp ground cinnamon
· ½ tsp nutmeg
· Pinch of salt
· 1 unbaked pie crust – we love graham cracker because of course we do
Preheat the oven to 425F. In a big giant bowl, cream together the butter and sugar. Add the eggs and mix that shit up real nice. Add the milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt – mix well.
Once all that shit’s combined pour it into the pie shell and bake for like 15 mins. THEN (in a twist of events) turn down the temperature to 350F and bake for another 40 minutes or until a knife inserted in the center comes out clean.
We recommend topping this with fresh whipped cream YES FRESH and maybe a few fresh chocolate shavings because you’re fancy.
