It’s getting like, warm n shit, which means it’s juuust about time to start bitching about the heat, our tans (or lack thereof), and the povo people at the pool (if you look like 10 lbs of sausage in a 5 lb bag in your bikini, just stop).
With this magical influx of warm weather comes our magical ability to down everything from daiquiris to margaritas to mojitos! IS THAT A MOJITO?! Yes, it is. But, because we aren’t basic bitches, we’re gonna make these a lil bit special—enter the berry and thyme mojito.
- 3-4 sprigs of fresh thyme
- About 10 fresh mint leaves
- 4 fresh blackberries
- 8 fresh blueberries
- 1 fresh strawberry
- 4 fresh raspberries
- Juice of one lime
- 2 oz light rum (or like, more)—we used Bacardi
First, you need some simple syrup. In a saucepan over medium high heat, combine 1 cup of white sugar and 1 cup of water along with the thyme sprigs. Cook and boil together until the sugar has dissolved, stirring occasionally. Remove from heat, discard thyme sprigs, and let cool.
Grab a highball glass and muddle the mint, cooled syrup, berries, and lime juice. Then fill that shit up with crushed ice and add your rum. Stir that shit until it’s all combined and some of the ice is totes melted. Spritz the top with a bit of soda water and stir once more. Serve poolside or like, indoors because there are bees out there and fuck that.
